Spicy Soup

1.Ingredients

1 teaspoon unsalted butter, 1/4 cup chopped celery,2 cloves chopped garlic, 1 tablespoon all-purpose flour,3 1/2 cups chicken broth, 1 1/2 cups chopped broccoli,1 1/2 cups chopped cauliflower, 2 tablespoons peanut butter, 1/4 teaspoon salt, 1/4 teaspoon crushed red pepper flakes,2 green chopped onions, 1/4 cup heavy cream

2.Directions

  1. Melt butter in a saucepan over medium heat; cook and stir celery and garlic until garlic is fragrant, about 5 minutes.
  2. Stir in flour to make a roux; cook for 1 minute.
  3. Stir in chicken broth, broccoli, cauliflower, peanut butter, salt, and red pepper flakes. Simmer for 15-20 minutes.
  4. Mix in green onions and heavy cream just before serving

 


Spinach Orzo Salad

1.Ingredients

1package (16 ounces) orzo pasta
6 ounces fresh baby spinach (about 8 cups), finely chopped
3/4 cup finely chopped red onion
3/4 cup crumbled feta cheese
3/4 cup reduced-fat balsamic vinaigrette
1/2 teaspoon dried basil
1/4 teaspoon white pepper
1/4 cup pine nuts, toasted

2.Directions

1. Cook orzo according to package directions. Drain ozo; rinse with cold water and drain well.
2. In a large bowl, combine spinach, onion, cheese and orzo. Mix vinaigrette, basil and pepper; toss gently with spinach mixture. Refrigerate until serving. Stir in pine nuts just before serving.

 


Spinach Strawberry Salad

1.Ingredients

spinach
strawberry, sliced set a few aside (egg slicer works wonders)
pecans, toasted


DRESSING
roland raspberry red wine vinegar
sugar or sugar substitute
dry mustard
vegetable oil
poppy seeds

2.Directions


1. Toast pecans over low heat, set aside to cool.
2. Combine dressing ingredients and shake well.
3. Toss and garnish with a few sliced strawberries.
4. Serve immediately.
